The liberal arts refers to everything from English to history to art to languages to astrophysics, math, and computer science. It covers all the non-professional majors. Some of them pay very well, and some don't pay well at all. Some colleges refer to a 'liberal arts degree' not as the above definition, which is for a liberal arts college, but instead to mean a 'general studies' major where you don't pick any one subject to concentrate on, and that's not very useful. And it's not the same as a degree in art, although that's not very useful either. You don't need an associates degree to transfer - you can take 2 years of random classes and then transfer.

You can transfer to a university with an associates degree, but you cannot go to their law school. You need a 4 year degree to go to law school. Law schools do not require a specific major as an undergrad but they want a high GPA and a high score on the LSAT. A large number of Law school students majored in Poly Sci.

Any job that requires *some* college. Some places don't care about the major as much as they do that you stuck with something enough to get a degree.

No, you just have to pass the required classes. Only professional degrees require licensing exams.

I don't know what state you're in but California has a new AA degree for studies simply to transfer using GE requirements for US and CSU. It is easier to obtain and transfers smoothly into a 4 year. The AA reads "Associate of Arts in Transfer Studies" look into it, as it may be useful in your situation.
