I think if you stick with research universities they are more
inclined to offer a BS degree in Economics. My alma mater
(University of Washington in Seattle) offers one. The link

Just to add on to the other answer, two other colleges to look into:

Barnard: the women college associated with Columbia; graduating here gives you an honorary degree from Columbia and it is liberal arts (and a lot smaller with 2,400 undergraduates)

Macaulay honor college: it is the honor's college of the City University system. It is really new but it is free (and you get a laptop) if you get in.
