I think you have it covered. Maybe a fruit salad... If you look in the cracker aisle in the store - you should see little cups (like a pie crust shape) made out of phyllo dough. You can fill these with flavored cream cheeses. Whip the cream cheese to make ot light and fluffy and fill using a pastry bag and tip. Something like a salmon flavored will work best.

Here are a couple of easy ideas/recipes that I've used when I did catering...

Easy Tea Cookies:
1 cake mix (use the lemon/orange/strawberry flavored cakes)
1 egg
1 stick of butter - softened.
Mix together and bake at 375 degrees for 8-10 minutes

Easy open faced roast beef tea sandwiches:
Hearty Rye bread - thinly sliced
Thinly sliced deli roast beef
Thinly sliced horseradish cheddar cheese from deli
French onion chip dip
Toast bread, spread dip one side of bread, layer beef and then cheese on top. Stick undr broiler long enough to melt cheese - cut diagonally to form toast points.

Using the flavored cream cheeses you can make other easy tea sandwiches. Use cookie cutters to make interesting shapes. For example, wheat bread or mini bagels and a salmon cream cheese spread, or a cinnamon bread with a honey walnut cream cheese.
