I like the idea of that wrap recipe and will keep it to try....but since everyone will be bringing
" sandwiches" why not try something cold and portable

Caesar Tortellini

1 pkg (9 oz) refrigerated filled tortellini

1/2 cup bottled Caesar dressing

1/4 cup grated Parmesan

about 20 cherry tomatoes

1 can (6 oz) pitted, large ripe olives, drained

salad greens

Cook and drain tortellini as directed.

Toss with dressing and cheese.

Cover and refrigerate about 4 hours but no longer than 24 hours, stirring occasionally.

Toss tortellini with tomatoes and olives.

Line a large bowl with salad greens and place tortellini mix in bowl.

Serve with toothpicks.

A cold tabouli (Mediterranean) is a sophisticated, light and summery dish (and easy for a crowd!)

2 cups cracked wheat (bulghur)
2 cups very hot water
1 cucumber, chopped
2 small tomatoes, chopped
1 bunch green onions, (8) sliced
1/2 cup fresh chopped mint
2 cups fresh chopped parsley
1 clove garlic, minced (optional)
Dressing:

1/2 cup fresh lemon juice
3/4 cup extra virgin olive oil
1 tablespoon pepper
2 teaspoons salt, or to taste

Also, you can make grilled or baked homemade pizzas, which can be prepared with original toppings, such as pesto cream cheese and smoked salmon with capers, or caprese (pesto, fresh mozzarella, basil). With a grilled crust, and cold toppings, the pizzas can be served at room temperature.

I think sourdough, the tartness will bring more flavor since you are using pretty benign flavors. It's a sturdy bread, just cut the crusts off. You can get a good sour dough at Panera if you have one nearby. I have to say I buy a Pepperidge Farms sourdough in the freezer section. You just pop it in the oven for a few minutes and it comes out really fresh and good. Down side, I can never slice even slices.
